Spiced Fruit Sourdough English Muffin French Toast

Transform your Gluten Freedom Spiced Fruit Sourdough English Muffins into a delightful French toast that's sure to impress! golden and crispy on the outside, soft and custardy on the inside. Elevate your creation with toppings like drizzled maple syrup, fresh berries, or a dollop of coconut yoghurt for that delicious touch.

Ingredients

4 Gluten Freedom Sourdough Fruit Muffins, halved
2 eggs
Β½ cup milk
1 teaspoon cinnamon powder
1 tablespoon vanilla extract

To Serve

Yoghurt or cream of your choice
Fresh seasonal fruit
Maple syrup or honey

Method

  1. Whisk the egg, milk, cinnamon and vanilla extract in a small bowl.
  2. Preheat a large frying pan over a medium temperature and add a knob of butter.
  3. When the butter has melted and the pan is greased well, working quickly, dip 1 half of the fruit muffin into the egg wash coating both sides, allow the excess to drip off and quickly transfer to the frying pan to cook each side for around 2 minutes or until golden brown.
  4. Transfer to a wire rack and repeat this process until all muffins have been toasted.
  5. To serve, stack your french toast high, top with your choice of yoghurt or cream, fresh seasonal berries and a generous drizzle of maple syrup!
