INGREDIENTS:

1 large avocado, stone removed and flesh mashed with a fork
1-2 large tomatoes, sliced into wedges (approximately 12 wedges)
4 poached eggs
150g feta cheese
4 tablespoons store bought basil pesto
Sea salt & cracked black pepper
