A fresh yet cheesy sandwich delight! Halloumi, pesto, and plenty of fresh vegetables stuffed between two slices of Simply Soft Sourdough (now softer and lighter than ever + a good source fiber!)
INGREDIENTS
THE PESTO:
- 1 cup pine nuts, lightly toasted
- β
Β cup olive oil
- 1 lemon zest and juice
- 2 handful fresh basil
- 1 tsp dried oregano
- 3 tbsp nutritional yeast
- S & P to taste
OTHER INGREDIENTS:
- 4 slices of Simply Soft Sourdough
- 1/2 an avocado, sliced
- 1 tomato, sliced
- Fresh baby rocket leaves
- Fresh baby spinach
- 6 slices of halloumi, 1cm thick
- Butter, as needed
- Salt and pepper, to season
INSTRUCTIONS
- In a food processor, process all the ingredients for the pesto until smooth and creamy.
- Pat halloumi slices dry and heat up a small fry pan, cook the halloumi slices for 2-3 minutes on each side or until golden.
- To make the sandwiches, spread 2 tbsp of pesto over 2 slices of simply soft sourdough bread and then pile on some tomato slices, cooked halloumi slices, avocado, baby rocket and spinach. Place the last 2 slices of bread on top.
