Simply Soft Sourdough Greek Inspired Burger

These patties are absolutely bursting with fresh Mediterranean flavour. A brilliant twist on burger night.

 

 

INGREDIENTS

  • 400g free range chicken mince
  • 1 garlic clove, diced
  • ½ red capsicum, seeds removed and diced
  • ½ small red onion, diced
  • 12 pitted Kalamata olives, roughly chopped
  • 50g feta, crumbled
  • Large handful fresh parsley, roughly chopped
  • ½ teaspoon dried oregano
  • 1 free range egg
  • Simply Soft Sourdough Buns, lightly toasted (and buttered)
  • Sea salt and cracked black pepper to season

YOGHURT AND CUCUMBER SAUCE

  • 1 cup Greek yoghurt
  • 1 large garlic clove, diced
  • 10cm piece telegraph cucumber

TO SERVE

  • lettuce leaves
  • sliced red onions
  • additional crumbled feta
  • sliced tomatoes

INSTRUCTIONS

  1. Combine the chicken mince, garlic, capsicum, red onion, olives, feta, parsley, oregano and egg. Add a good seasoning of salt and pepper. Mix this together really well.
  2. Divide the mixture into 4 roughly even portions. Use damp hands to form patties (it’s a sticky mix) and cook these in a pan over a medium heat for approximately 4-5 minutes on each side until browned on each side and cooked through.
  3. Grate the cucumber and squeeze lightly to remove some of the liquid. Add to the Greek yoghurt along with the garlic. Season well.
  4. To assemble burger, spread one side of the lightly toasted Simply Soft Sourdough bun generously with the yoghurt sauce. Top with lettuce. Place the patty on top of this and finish with sliced tomato, feta and red onion.
