Paleo Super Seeded Green Breakfast Bowl

A healthy, vibrant and deliciously balanced way to start the day.

 

INGREDIENTS

  • 500g raw greens like kale or silverbeet, stems trimmed and leaves chopped
  • 1 garlic clove, finely diced
  • ½ cup raw sunflower seeds
  • ¼ cup raw sesame seeds
  • 2 teaspoons tamari or soy sauce
  • 4 slices Venerdi Super Seeded Paleo Bread
  • 3-4 free range egg
  • Olive oil for sautéing
  • Sea salt for seasoning
TO SERVE:
  • Halved cherry tomatoes
  • Hummus
  • 1 avocado, sliced

INSTRUCTIONS

  1. Heat a glug of olive oil in a sauté pan over a medium heat. Add the greens, garlic and a pinch of salt. Sauté for 3-5 minutes until wilted and just tender.
  2. Toast the sunflower seeds and sesame seeds in a dry skillet over a medium heat until lightly browned. Remove from the heat and stir through the tamari.
  3. Toast 4 slices of Paleo Super Seeded. Butter if desired and cut in half.
  4. Bring a medium saucepan of water to a boil. Place the eggs gently in the water and cook for 6 1/2 minutes. Peel carefully until cold running water and cut in half.
  5. Place eggs on top of the cooked greens. Add some cherry tomatoes, a dollop of hummus and a sprinkle of toasted seeds. Serve with the Super Seeded toast.
