Simply Soft Sourdough Halloumi & Pesto

Serves 2

A fresh yet cheesy sandwich delight! Halloumi, pesto, and plenty of fresh vegetables stuffed between two slices of Simply Soft Sourdough (now softer and lighter than ever + a good source fiber!)

 

 

INGREDIENTS

THE PESTO:
  • 1 cup pine nuts, lightly toasted
  • ⅓  cup olive oil
  • 1 lemon zest and juice
  • 2 handful fresh basil
  • 1 tsp dried oregano
  • 3 tbsp nutritional yeast
  • S & P to taste
OTHER INGREDIENTS:
  • 4 slices of Simply Soft Sourdough
  • 1/2 an avocado, sliced
  • 1 tomato, sliced
  • Fresh baby rocket leaves
  • Fresh baby spinach
  • 6 slices of halloumi, 1cm thick
  • Butter, as needed
  • Salt and pepper, to season

INSTRUCTIONS

  1. In a food processor, process all the ingredients for the pesto until smooth and creamy.
  2. Pat halloumi slices dry and heat up a small fry pan, cook the halloumi slices for 2-3 minutes on each side or until golden.
  3. To make the sandwiches, spread 2 tbsp of pesto over 2 slices of simply soft sourdough bread and then pile on some tomato slices, cooked halloumi slices, avocado, baby rocket and spinach. Place the last 2 slices of bread on top.
  4. Enjoy!

P.S Save the extra pesto in a jar for your next sandwich or toast!
