Mother’s Day Pesto Eggs in a Hole

Show Mum just how much she means this Mother’s Day with a simple, heartfelt breakfast. It’s easy, delicious, and perfect for little helpers to join in.

 

You’ll need:

  • 1 packet of Gluten Freedom sweet potato sourdough bread
  • Pesto of your choice
  • Eggs
  • Fresh chives, finely chopped
  • Bacon

Method:

  1. Lightly spread pesto over one slice of sweet potato sourdough.
  2. Take a second slice and use a heart-shaped cookie cutter to cut out the centre. Place this slice on top of the pesto-covered one.
  3. Carefully crack an egg into the heart-shaped hole.
  4. Place in the air fryer at 160°C for around 8 minutes, along with the cut-out heart pieces—they make perfect egg dippers.
  5. Cook until the egg is set to your liking and the bread is golden.

Serve warm with crispy bacon on the side and a sprinkle of fresh chives for a finishing touch.
