This Low Carb Caesar Salad is packed with protein, delicious flavours and topped with crispy low carb croutons.
Ingredients
4 cups romaine or kale lettuce
1/2 cup Caesar dressing (store-bought or homemade)
1 cup cooked salmon
1/4 cup Parmesan cheese
1-2 boiled eggs
2 slices Low Carb Goodness Hemp & Linseed Bread
Flaky sea salt (for topping)
Freshly ground black pepper (optional, for seasoning)
Method
Prepare the Croutons:
Preheat your oven to 180°C.
Cut the Low Carb Goodness Hemp & Linseed Bread into small cubes.
Spread the bread cubes on a baking sheet and drizzle with a little olive oil (optional) and season with salt and pepper. Toss to coat.
Bake in the preheated oven for about 10-15 minutes, or until golden and crispy. Keep an eye on them to prevent burning. Remove and let cool.
Prep the Salad:
In a large mixing bowl, add the chopped romaine or kale lettuce.
Add the Caesar dressing, tossing the greens until they’re well coated.
Assemble the Salad:
Transfer the dressed lettuce to a serving bowl or plate.
Top the lettuce with flaked salmon and quartered boiled eggs.
Sprinkle the shaved or grated Parmesan cheese evenly across the salad.
Add the homemade Hemp & Linseed croutons on top.
Top the salad with a sprinkle of flaky sea salt and freshly ground black pepper, if desired. Serve immediately while the croutons are still warm and crispy.
