Green Goodness Sandwich

Vibrant, delicious and packed full of goodness, this sandwich is the perfect lunch!

Ingredients

  • 2 slices Broken Black Rice & Polenta Sourdough
  • Small handful of Baby Kale
  • Small handful of Alflafa Sprouts
  • Β½ an Avocado, sliced
  • A few slices of cucumber
  • 2 Tablespoons Ricotta (to keep this recipe dairy free, instead opt for your favourite DF cheese)
  • 2 Tablespoons Basil Pesto
  • Squeeze of lemon juice

Instructions

  1. Very lightly toast your slices of Broken Black Rice & Polenta Sourdough
  2. Top one slice of sourdough with the basil pesto, and the other half with the ricotta.Season the ricotta with a sprinkle of salt and pepper.
  3. Top the ricotta with the slices of avocado, followed by a squeeze of lemon juice, then the slices of cucumber, baby kale and alfalfa sprouts. Close the sandwich with the pesto topped slice of sourdough and enjoy!
