The only thing better than a BLT is a Gluten Free one! It’s a bunch of classic and simple flavours that just go so GOOD everytime!

Ingredients

4 slices of Gluten Freedom Sweet Potato Sourdough
2 tablespoons basil pesto
2 tablespoons tomato relish
4 crunchy lettuce leaves
4 slices of shortcut or rasher bacon
4 slices of tomato
Β½ large avocado, sliced into strips
Sea salt and freshly cracked black pepper

Method

  • Cook the bacon in a frying pan over a medium to high heat or on the BBQ until cooked to your
    liking. Set aside on a paper towel to soak up any excess oil.
  • Place the Sweet Potato Sourdough into the toaster and toast to your liking.
  • Layer your BLT with a bottom layer of basil pesto, lettuce, bacon, tomato, avocado and finally
    finish off with the tomato relish.
  • Season with salt and pepper.
